Melissa Clark’s Olive Oil Granola

adapted from In the Kitchen with a Good Appetite

  • 3 cups rolled oats
  • 1.5 cups hulled raw pistachios
  • 1 cup hulled raw pumpkin seeds
  • 1 cup coconut chips
  • 1 cup maple syrup
  • 1/2 cup extra-virgin olive oil
  • 1 tsp. kosher salt
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cardamon
  • 1 tsp. ground ginger
  • 1.5 cups chopped dried fruit (apricots, craisins, etc.)

Combine all ingredients except dried fruit.  Mix well.

Spread on baking sheet and bake at 300 degrees for 45 minutes or until golden and well toasted.  Stir well and check every ten minutes.
