Lazy Pho Broth

  • 1 chicken or 3 beefy soup bones
  • 2 oz. fresh ginger coarsely sliced
  • 1 tbsp. star anise
  • 1 tbsp. black peppercorns
  • 1 tbsp. whole cloves
  • 3 tbsp. fish sauce
  • 3 tbsp. sugar
  • 2 cinnamon sticks

Place ingredients in stock pot.  Add water to cover (roughly 3 quarts).  Boil gently until the meat fall off the bones.  Strain.  Discard bones and spices.  Set meat aside to use in soup service.
