Gazpacho

(adapted from Moosewood Cookbook by Mollie Katzen)

Blend one  bottle of spicy tomato juice with the following ingredients:

  • juice of one lemon
  • juice of one lime
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. olive oil
  • 2 large cloves of garlic (chopped)
  • 1/4 cup fresh parsley
  • dash of cumin

If you prefer to use one bottle of regular tomato juice, you can add one  jalapeno (seeded & chopped) into the blender.

Dice:

  • 1 cucumber
  • 2 large tomatoes
  • 1 bunch of scallions

Combine the blended juice with the chopped vegetables and add salt to taste.
